You should store the pâte de fruit in a cool and dry place, away from the sun or hot lighting. Excess heat and moisture cause “sweating” and will reduce the shelf life. When stored properly shelf life is in excess of twelve months. We do not recommend refrigeration. The inside of a refrigerator is a very moist environment and will reduce shelf life.
